Greek Chicken Pie

October 24th, 2009

Tonight I made a Greek Chicken Pie using filo pastry. I made it with shredded chicken, feta cheese, white onion, crushed and chopped garlic, fresh coriander, fresh parsley and fresh mint (salt and pepper too – and a beaten egg for binding!).

It was then wrapped up in a gorgeous filo pastry – which I have never used before!

We served it with a greek-style salad of sliced red onion, tomato, feta cheese and tzatziki – which was a nice combo!

Slow Roast Belly Pork

October 17th, 2009

Julia decided to make another Jamie Oliver recipe – this time, it was a slow roast belly pork recipe.

It was delicious – everyone enjoyed it – and it was well worth the 2.5hr wait! Our kitchen has never smelt so good!

Spicey Beef with Noodles Stir-Fry

October 15th, 2009

Last night, I cooked Julia and lovely spicey beef with noodle stir-fry. I got the recipe from a Jamie Oliver iPhone application (slightly tweaked, as he used eggy rice).

It was delicious!

I made a very severe mistake though; when working with the fresh chillis, I cut and onion afterwards – which made my eyes water. I rinsed my hands under the tap, then wiped my eyes. Error! My eyes starting burning from the chilli essence on my hands! Yikes – my hands were burning even before I went to bed later in the night!

Julia and I both enjoyed it and will make it again some time!
